Summer entertaining with Milliken Executive Chef Jim McCallister

​​Baba Ganoush

1 med Eggplant
1 cloves Garlic
1 tsp Salt
1/4 cup Tahini
1ea Lemon juice
Pinch Cayenne pepper

  1. ​Roast eggplant until thoroughly cooked. Peel, beat to pulp.
  2. Mix garlic, salt and stir in tahini. Beat in lemon juice; then beat mixture into eggplant. Add cayenne pepper.


Succotash

1 cup Yellow corn, roasted, cut off the cob
1 cup Fava beans, blanched and peeled
½ cup Celery, diced small
½ cup Red bell pepper, diced small
½ cup Red Bermuda onion, diced small
2 cloves Garlic, minced
2 tsp Fresh thyme
2 tsp Chives, minced
2 Tbsp Bacon vinaigrette
1 Tbsp Olive oil
Salt and fresh ground pepper to taste

  1. Sautee onion, bell pepper, celery, and garlic in olive oil.
  2. Add thyme, favas and yellow corn. Cook until warmed through.
  3. Add vinaigrette. Season to taste. Add chives as garnish.
