Healthy holiday entertaining from Milliken Executive Chef Jim McCallister

To celebrate the season, we’re sharing a selection of delicious recipes for healthy holiday entertaining from Milliken Executive Chef Jim McCallister. If you follow us on Facebook, you’ve probably seen the recipes below marked #HolidayHospitality. These artichokes will be a delicious addition to your holiday meal!

  23 baby artichokes cooked*

  2 shallots

  1 cup olive oil

  1/2 tsp sugar

  5 tbsp champagne vinegar

  1 tsp thyme

  1 tsp parsley

  1/8 tsp red pepper flakes

  Salt and pepper to taste

Directions: Sautee shallots in small amount of oil. Halve the cooked artichoke hearts. Assemble remainder of vinaigrette and mix all together. *To cook artichokes, trim, cover with water, season with salt, lemon, & garlic. Cook until tender.

 

Below is a dip that is sure to spice up all sorts of appetizers – and is simple to whip up!

  1 cup mayonnaise

  1  lemon, juiced

  1/2 clove garlic, minced

  1 tbsp parsley

Directions: Stir all ingredients together.

 

These sushi rolls are an excellent appetizer and are certain to dazzle friends and family.

  5 sheets of nori

  1 cup sushi rice

  1 1/2 cup water

  1/4 cup seasoned rice wine vinegar

  1 carrot, cut into strips & cooked

  1 avocado

  1 red bell pepper

  1 cucumber

  Wasabi, pickled ginger, soy sauce

  Fresh tuna or smoked salmon

Directions: Rinse rice for 15 minutes. Cook with water. Spread out to cool. Season with rice wine vinegar. Roll as desired.
