1 med Eggplant
1 cloves Garlic
1 tsp Salt
1/4 cup Tahini
eggplant until thoroughly cooked. Peel, beat to pulp.
garlic, salt and stir in tahini. Beat in lemon juice; then beat mixture into
eggplant. Add cayenne pepper.
1 cup Yellow corn, roasted, cut off the cob
1 cup Fava beans, blanched and peeled
½ cup Celery, diced small
½ cup Red bell pepper, diced
½ cup Red Bermuda onion, diced
2 cloves Garlic, minced
2 tsp Fresh thyme
2 tsp Chives, minced
2 Tbsp Bacon vinaigrette
1 Tbsp Olive oil
Salt and fresh ground pepper to taste
- Sautee onion, bell
pepper, celery, and garlic in olive oil.
- Add thyme, favas and
yellow corn. Cook until warmed through.
- Add vinaigrette.
Season to taste. Add chives as garnish.
